The single best scientific reference book may be The China Study by T. Colin Campbell.
Good to see it here in your list of books. Decades of research from all over the world. Convinced me to stop eating all animal products, start running regularly again and then relax.
Had given up all red meat 25 years ago also, and doctors can find no problems. Take no meds, excellent health at age 69.

Feels great to be active and totally free of bad symptoms!
