Slow-Cooker: 3 quart size
Setting & Cook Time: LOW for 7 1/2-8 hours, or High for 3-4 hours
TIP: You don't need company to make oatmeal for 8! Do it for yourself, and refrigerate the left-overs & enjoy oatmeal every morning for a week. Just warm it up in the microwave, along with frozen berries, & then top it with a couple walnuts, & chia seed. Yum!!!
Ingredients:
2 cups of steel-cut oats
1/2 cup of dried apple rings, cut into small pieces with kitchen shears
1/2 cup of date pieces (more if you want this sweeter)
1/4 cup currants or raisins
6-7 cups of water (Note: if you are going to be sleeping longer than 7 1/2 hours, add the extra cup of water so it won't have crispy edges)
1 1/2 cups soy milk, or other non-dairy milk
1 15 ounce can of plain pumpkin
Preparation:
1. Spray the crockpot with a cooking spray so the oatmeal won't stick. Combine all the ingredients in the slow-cooker. Cover & cook on LOW for 7 1/2 to 8 hours or HIGH for 3-4 hours until it's thick & creamy
2. Stir well & scoop into bowls. Add more non-dairy milk if you like it "less thick"
3. Top with thawed, warmed, or fresh mixed berries, walnuts, & chia seed, if desired.
